When you get a piano sample, you are getting a bunch recordings of single strikes of a piano at different pitches. In a whole complex set up, they play recordings of an instrument, in such a way that the recordings played back are playing the note at the right pitch, etc. These are recordings which are mapped to a keyboard, in such a way that when assembled to simulate and instrument. The other catagory of samples, I'll call instrument samples. You can think of this catagory of samples, as a loop, that is triggered by a keyboard. In the case of "samples" such as what a DJ uses, it's basically a long recording of beats or other patterns, which are triggered by a start time of some sort. When you press that key, it tells the sample player to begin playing that recording. In a sampler, you take a recording, and map it to a key position. Wow, your asking a lot here!
